Stalam COLDWAVE+ Rapid RF Thawing & Tempering
The Stalam COLDWAVE+ is a rapid, in-line defrosting and tempering system based on radio frequency (RF) technology. Rather than transferring heat from the surface inwards like air or water methods, RF generates heat directly and uniformly throughout the entire product mass, so frozen blocks and individual pieces are tempered to -3°/-1°C in minutes rather than hours or days. This eliminates the drip loss of conventional thawing — recovering up to 8% in weight — while the speed and uniformity prevent bacterial growth and preserve texture, colour and nutritional quality. Product can be treated naked on the conveyor or still inside its packaging (carton boxes, polyethylene liners/bags, plastic crates), and arrives at exactly the temperature needed for the next process: grinding, slicing, portioning, forming, dicing, mincing, tumbling or marinating. The continuous in-line process needs far less floor space than traditional defrosting rooms and supports just-in-time production scheduling.
