Cryogenic Food Freezing Cabinets

Dohmeyer cryogenic batch freezers are used for discontinuous cooling, freezing or crust-freezing for a wide range of food products including meat, fish, vegetables and poultry in food factories.

Controlled injection of the cryogenic gas lowers the temperature in the cabinet as the gas immediately evaporates. The latent heat of evaporation is the main source of cooling energy. Dohmeyer CryoRoll for IQF Food Freezing

IQF Freezing of Food

The Dohmeyer CyroRoll is ideal for industrial IQF freezing of food products including meat, fish, shellfish, poultry, pasta and vegetables in food factories.  These rotary drum freezers consist of a sloping cylindrical drum, which rotates around its axis. Product and cooling medium are loaded continuously at the highest entrance point of the drum. By the rotating movement, both are intensively mixed while, at the same time, sliding to the lower exit of the drum. The stirring movement and the mixing prevent products from clumping together. Linear freezing tunnel with 3 belts on top of each other

Dohmeyer multi-belt cyrogenic freezers are ideal for food freezing where factory space is limited and/or the foodstuff requires high production capacities and/or long residence times, which would otherwise require very long linear tunnels. By stacking multiple belts on top of each other, you can drastically reduce the overall dimensions of the freezer.

With this solution multiple superposed conveyor belts move the product backwards and forwards through the freezer. At the end of each belt, the product falls onto the belt below to go back through the freezer. Designs with 3, 7, 9 and 11 levels are quite normal. (more…)

Dohmeyer Cryogenic Screw Conveyor Freezer

Introduction

Dohmeyer cryogenic screw conveyors  are ideal for factory cooling or freezing of  a wide variety of food, typically to prepare the texture and temperature of products before grinding ( e.g. cold brew coffee, herbs, …).   The conveyors can be used in conjunction with both continuous and batch production systems. The screw conveyors are not limited to moving products horizontally and upwards; while moving the product, screw conveyors can cool, mix and blend components.
As the product moves, it is gently sprayed and mixed with coolant.  Injecting liquid nitrogen droplets or CO2 dry ice into the screw conveyor ensures efficient and homogenous cooling or freezing.  Exhaust fans extract the waste gases.

Moving foodstuffs in this way saves time, reduces labour cost, eliminates handling and is more hygienic than conventional methods.
